Aged rum has delicious oaky flavors of vanilla and cinnamon, along with a complex sweetness. The bitter fruit in the Aperol combined with the intensely savory maple / burnt caramel flavors of the fenugreek perfectly complement and balance out the woody sweetness of the rum; these flavors work together to produce a balanced, complex cocktail that’s easy to make and only requires a few ingredients. Plus, it looks great – the Aperol lends a beautiful vermilion color and it almost looks as if it was lit from within.
INGREDIENTS:
Up glass
2 Oz Aged Rum (I used Flor de Caña 18 year)
½ Oz Aperol
Fenugreek Cocktail Spice
Ice
Orange Twist (or brandied cherry)
INSTRUCTIONS:
Fill a cocktail shaker halfway with ice.
Add the rum, Aperol and 2 ½ blasts* Fenugreek Cocktail Spice.
Shake, then strain into an Up glass.
Garnish with an orange twist or brandied cherry
* a blast is a measurement describing one eyedropper of Cocktail Spice – approx 25 drops
